Correct the removal of existing files
...
Don't remove anymore the debian installer directory ! Some others
scripts might write some data (eg. make_debian_initrd_with_firmware.sh)
Remove the sample menu.cfg.

Ensure to use the correct TFTP_ROOT_DIR
...
If tftpd-hpa is available, ensure to source it's preferences file.
Otherwise, define a default TFTP_DIRECTORY var.
